Chocolate and sugar freeze spray is a specialized confectionery spray for creating chocolate and sugar show pieces. It is used for rapidly cooling down pieces made of chocolate or sugar when doing artistic and difficult designs. It can also be used to cool down gum pastes and fondants used in moulding.
